Made a great batch of pancakes with a nice texture from the cornmeal. They are hearty- they "stick to your ribs" so you're full all morning. They are also really easy to make- and quite scrumptious with a bit of cream, peaches, and a sprinkle of sugar. Sweet or savory, this is a good one.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Oat Bran Pancakes&lt;/strong&gt; (from the Dukan Diet)&lt;br /&gt;(*This recipe makes one large pancake.)&lt;br /&gt;1 Egg&lt;br /&gt;2 tablespoons Fromage Frais (Plain yogurt or low fat cream cheese works great.)&lt;br /&gt;2 tablespoon Oat bran (I found a good deal on oat bran at our local COOP.)&lt;br /&gt;1 tablespoon Wheat bran (I didn't have wheat bran, so I did another tablespoon of oat bran.)&lt;br /&gt;&lt;br /&gt;1. Mix the ingredients together in a bowl. If the mixture is too stiff, add a couple of teaspoons of skim milk.&lt;br /&gt;2. Add a couple of drops of light oil to a frying pan. Wipe off the oil with a sheet of paper kitchen towel.&lt;br /&gt;3. Spread the mixture in the pan.&lt;br /&gt;4. Cook on a medium heat until the underside is golden and the upper side starts to dry.&lt;br /&gt;5. Stir in water until smooth. Add blueberries. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; cover and keep warm. &lt;/li&gt;    &lt;li&gt;For pancakes, in a large bowl, combine the flour, sugar, baking powder and salt. Combine the eggs, milk, sour cream and butter.  &lt;p&gt;&lt;strong&gt;Strawberry Mango Lime Syrup&lt;/strong&gt; (By Lyd)&lt;/p&gt;  &lt;ul&gt;   &lt;li&gt;4 cups chopped ripe mango, from 2 (1-pound) mangoes &lt;/li&gt;    &lt;li&gt;1 cup fresh strawberries, chopped &lt;/li&gt;    &lt;li&gt;1/2 cup sugar &lt;/li&gt;    &lt;li&gt;1 and 1/2 cup water &lt;/li&gt;    &lt;li&gt;2 tablespoons fresh lime juice, or to taste &lt;/li&gt;    &lt;li&gt;2-3 tablespoons cornstarch &lt;/li&gt;    &lt;li&gt;pinch of cinnamon &lt;/li&gt; &lt;/ul&gt;  &lt;p&gt;In a small pot, stir cool water and cornstarch together until well mixed.&amp;#160; Turn on heat to medium.&amp;#160; Add sugar, lime and cinnamon and bring to a boil.&amp;#160; I use the gel/paste kind because it requires a lot less and makes more vivid colors. You can get those at the cake decorating section at most stores. I actually mixed blue and yellow for these pancakes. I only added a tiny, tiny bit to the batter and mixed it in well. Using an 1/8 C. make four leaf clovers. Ok, now that we have that out of the way, I can share my new creation w/ you.  Good Mood Pancakes(or waffles if you prefer).  This morning, I woke up in a very good mood.  My house was clean, I got 8+ hours of sleep, and the holidays are rolling around (it really doesn't take much to make me happy)!  So, I thought that I would spread my happy mood around to my sweet hubby (who often has to fend for himself when it comes to breakfast) and cook pancakes!&lt;br /&gt;&lt;br /&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://1.bp.blogspot.com/__V9eYYq5YNo/TOR3udtFnBI/AAAAAAAAAtM/gkzz-7WNRHc/s1600/2010%2B001.jpg"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 300px;" src="http://1.bp.blogspot.com/__V9eYYq5YNo/TOR3udtFnBI/AAAAAAAAAtM/gkzz-7WNRHc/s400/2010%2B001.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5540685081703980050" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;So here's the law according to the rules:  You CANNOT make these pancakes if you're in a bad mood!  And you'll find that if you ARE in a bad mood when you make these, it will go right away because these smell and taste like goodness!        &lt;br /&gt;&lt;br /&gt;Ok, here you go.  Basically, these pancakes are your average pancakes that I spiced up because I was in a good mood (hence the name).  Feel free to make them the boring way, if you are in a bad mood!  :)  Also, as a disclaimer, I'm sure that someone else has already come up w/ this recipe, but I've never seen one, so don't take me to court or anything!   &lt;br /&gt;&lt;br /&gt;Good Mood Pancakes/Waffles&lt;br /&gt;&lt;br /&gt;1/2 cup flour&lt;br /&gt;1/2 cup whole wheat flour&lt;br /&gt;1 tablespoon sugar&lt;br /&gt;1 teaspoon baking powder&lt;br /&gt;1/2 teaspoon baking soda&lt;br /&gt;1/2 teaspoon cinnamon&lt;br /&gt;1/4 teaspoon salt&lt;br /&gt;*3/4 c. STRAWBERRY yogurt + 1/4 c. water  (this is where I changed things up, the recipe calls for plain yogurt, I switched it to strawberry.  It was delicious!)&lt;br /&gt;1 large egg&lt;br /&gt;2 tablespoons oil&lt;br /&gt;*1 tsp. VANILLA (Another way I changed things!  Vanilla makes the world so much better!)&lt;br /&gt;*Another add-on of mine is that you HAVE to have served w/ homemade whipped cream on top!&lt;br /&gt;&lt;br /&gt;Put the flours, sugar, baking powder, baking soda, cinnamon and salt into a large bowl. Stir to mix well. Measure the yogurt mixture in a 2-cup glass measure. Add the egg and oil and vanilla to the measuring cup. Beat with a fork or wire whisk to blend. Add to the flour mixture and stir to form a smooth batter.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;For pancakes:&lt;/span&gt; Heat the griddle or skillet over moderately high heat until it feels hot when you hold your hand directly above it. Lightly grease the griddle. For each pancake, pour 1/4 cup batter onto the griddle. Cook 3-5 minutes, until bubbles appear on the surface and the undersides are golden brown. Adjust the heat if the pancakes are browning too fast. Turn the pancakes over and cook 1-2 minutes longer to brown the second side.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;For waffles:&lt;/span&gt; heat the waffle iron; grease it lightly. Pour in the appropriate amount of batter and spread to the edges. Close and cook until the iron will open easily. Keep finished waffles or pancakes warm in a 200ºF oven - pancakes on a plate and loosely covered to keep moist; waffles directly on the oven rack, uncovered, to stay crisp. Makes 8 4" pancakes.&lt;br /&gt;&lt;br /&gt;Serves 4. Come on.&lt;br /&gt;Seth liked these, by the way. &amp;nbsp;He is not a pancake guy unless they're white and fluffy, and then he won't allow himself more than two bites. &amp;nbsp;But he actually &lt;i&gt;complimented&lt;/i&gt;&amp;nbsp;me on these, and that's saying something.&lt;br /&gt;&lt;br /&gt;2 cups whole wheat flour&lt;br /&gt;2 tablespoons white sugar&lt;br /&gt;1 tablespoon and 1 teaspoon baking powder&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;2 egg, beaten&lt;br /&gt;2 cups milk&lt;br /&gt;1/4 cup vegetable oil&lt;br /&gt;4 ripe bananas, mashed&lt;br /&gt;&lt;br /&gt;Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.&lt;br /&gt;Stir flour mixture into banana mixture; batter will be slightly lumpy.&lt;br /&gt;Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot. I like really basic pancake recipes, but the taste and the  texture made up for it.  They were great.  I also just went ahead and  made it 1 cup of whole wheat flour- why go to the trouble of measuring  out that 1/4 cup? We like to top ours with a blended up can of pears.   Good pancakes! (My husband and I are like carnivores who enjoy ice cream once in a while :) ).  So when I woke up the other morning, I thought, "I do believe I'm in the mood for pancakes....but not sweet pancakes."  SO......I made up my very own "Carnivore" pancake mix!  Basically, it's like hash browns, eggs, and sausage....mixed up. :) But who wants to wait around to cook the sausage, put the eggs on the griddle, set them aside, and let them get cold whilst your cooking your hash browns?  With this easy mix, you'll be able to eat all of those delicious things at once! I'll list the ingredients and then just click on the image for instructions!  Mu husband and I decided that the potatoes would cook better if you make smaller pancake circles. I love making Holiday specific foods, and this is a super fun way to celebrate Fourth or July, or even Flag Day! &lt;/p&gt;  &lt;p&gt;It was fairly easy to use and the non-stick surface worked great. I do have a few tips for using the Flip It. I learned from experience, so you wont have to. &lt;/p&gt;  &lt;ul&gt;   &lt;li&gt;After you preheat it on the stove, remove it from the heat to cook the pancakes (if not you will end up with a really pretty looking, black flag imprint that is inedible).&lt;/li&gt;    &lt;li&gt;Make sure to spray both sides with cooking spray or it wont flip properly. &lt;/li&gt;    &lt;li&gt;Let it cook long enough before you try flipping it.&lt;/li&gt; &lt;/ul&gt;  &lt;p&gt;It is still not quite as fast as loading up a big griddle because you must make them one at a time, but it sure makes some pretty, patriotic pancakes. It can also make omelets and grilled cheese sandwiches. I loved that it was small and light, not bulky at all. Well, just wait until you get a "mouth full!"  Don't shy away- you can do it! The lemon and ricotta makes this one stand out from your typical pancake, but then you fold in the fluffy egg whites, and the strawberry stuff- sounds so fancy- (I don't even know what coulis means) but I do know it tasted incredible! SO SWEET and yummy. What a way to kick of the day! If you've got some time... because trust me, this one takes some TLC, whip these babies up... you'll thank yourself after, I promise. Doug said, (and I quote,) "These are by far the BEST pancakes I have ever had."&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Meyer Lemon Ricotta Pancakes with Macerated Strawberry Coulis&lt;/strong&gt; (Recipe courtesy of Food Network's Anne Burell)&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Strawberry coulis:&lt;/em&gt;&lt;br /&gt;1quart strawberries, topped and quartered&lt;br /&gt;1/2 cup sugar&lt;br /&gt;1/2 cup orange juice&lt;br /&gt;&lt;br /&gt;Pancake:&lt;br /&gt;2 cups all-purpose flour&lt;br /&gt;3/4 cup sugar&lt;br /&gt;1/2 teaspoon salt, plus a pinch for egg whites&lt;br /&gt;1 heaping teaspoon baking powder&lt;br /&gt;4 eggs, separated&lt;br /&gt;1 heaping cup ricotta cheese&lt;br /&gt;3/4 cup milk&lt;br /&gt;2 Meyer lemons, zested and juiced&lt;br /&gt;Butter, for cooking the pancakes&lt;br /&gt;Powdered sugar, for dusting&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Strawberries:&lt;/em&gt;&lt;br /&gt;Toss the strawberries with the sugar and orange juice. Cover and let sit at room temperature for at least 30 minutes.&lt;br /&gt;After the berries and sugar have macerated and become very juicy, remove 1/2 of the berry mixture, put it in a food processor and puree until smooth. Return it to the rest of the berries and reserve until ready to use.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Pancakes:&lt;/em&gt;&lt;br /&gt;Sift together all of the dry ingredients in a large bowl. In another bowl, combine the egg yolks, ricotta, milk and lemon zest and juice, and mix until it becomes homogeneous. Make a well in the dry ingredients, add the wet ingredients to the well and whisk until combined.&lt;br /&gt;Preheat a griddle.&lt;br /&gt;In another bowl, using a whisk or electric mixer, beat the egg whites with a pinch of salt to stiff peaks. Fold the egg whites into the flour mixture in thirds. Do this quickly and gently so the pancakes will be light and fluffy.&lt;br /&gt;Melt small pats of butter onto the preheated griddle, and spread it around with a paper towel to remove any excess butter. Spoon or ladle the pancake batter onto the prepared griddle to desired size of the pancake. When the top of the pancake is full of holes, like bubbles have risen to the surface and burst, the pancake is ready to flip. Flip the cakes and cook until the bottom is golden brown.&lt;br /&gt;Remove the pancakes from the grill to serving plates. I  haven't always been a pancake lover, but these were yummy and different  than the "norm."  They blend sour cream and cottage cheese--ingredients  usually associated with blitzes.  But that's what gives them such a  distinct, delicious, old fashioned flavor.  You can top the pancakes  with berry syrup, fruit (we chose peaches) and whipped cream to turn an  ordinary morning into an extraordinary day!&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;1 cup all-purpose flour (I used whole wheat flour and I promise it tasted delicious!)&lt;br /&gt;1 tablespoon sugar&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1 cup (8 oz) sour cream&lt;br /&gt;1 cup (8 oz) small curd cottage cheese (I used large curd and it still tasted delicious)&lt;br /&gt;4 eggs, lightly beaten&lt;br /&gt;Syrup (optional)&lt;br /&gt;Fresh fruit (optional)&lt;br /&gt;In a bowl, combine the flour, sugar, and salt; mix well.  Add sour cream, cottage cheese and eggs; mix just until combined.  Spoon 1/4 cupfuls of batter onto a greased hot griddle.  Turn when edges are set; cook until second side is golden brown.  Serve w/ syrup and fruit of desired. They were so moist and hearty. The best part is the crunchy topping that makes kind of a sweet, toasty crust. And they have whole wheat flour and oatmeal to make them a bit more healthy. &lt;/p&gt;  &lt;p&gt;I am also excited to share my new discovery. Powdered buttermilk! I don’t know about you, but I always need buttermilk when I don’t have it and when I actually have it I let it go bad before I get around to using it. It works great in bread machine recipes, too! &lt;/p&gt;  &lt;p&gt;&lt;strong&gt;&lt;u&gt;Ingredients:&lt;/u&gt;&lt;/strong&gt;&lt;/p&gt;  &lt;ul&gt;   &lt;li&gt;2 C. all purpose flour &lt;/li&gt;    &lt;li&gt;1/3 C. whole wheat flour &lt;/li&gt;    &lt;li&gt;1/3 C. quick-cooking oats &lt;/li&gt;    &lt;li&gt;2 TBSP. sugar &lt;/li&gt;    &lt;li&gt;2 tsp. baking powder &lt;/li&gt;    &lt;li&gt;1 tsp. baking soda &lt;/li&gt;    &lt;li&gt;1 tsp. salt &lt;/li&gt;    &lt;li&gt;1 tsp. ground cinnamon &lt;/li&gt;    &lt;li&gt;2-1/3 C. Buttermilk &lt;/li&gt;    &lt;li&gt;2 eggs, lightly beaten &lt;/li&gt;    &lt;li&gt;2 TBSP. vegetable oil &lt;/li&gt; &lt;/ul&gt;  &lt;p&gt;&lt;em&gt;Crunchy Topping:&lt;/em&gt;&lt;/p&gt;  &lt;ul&gt;   &lt;li&gt;1/2 C. quick-cooking oats &lt;/li&gt;    &lt;li&gt;1/4 C. chopped slivered almonds &lt;/li&gt;    &lt;li&gt;1/4 C. packed brown sugar &lt;/li&gt;    &lt;li&gt;1 tsp. ground cinnamon &lt;/li&gt; &lt;/ul&gt;  &lt;p&gt;&lt;strong&gt;&lt;u&gt;Directions:&lt;/u&gt;&lt;/strong&gt;&lt;/p&gt;  &lt;ol&gt;   &lt;li&gt;In a bowl, combine flours, oats, sugar, baking powder, baking soda, salt, and cinnamon. Combine buttermilk, eggs, and oil. If you use the powdered buttermilk just put it in with the dry ingredients and the water with the wet ingredients. &lt;/li&gt;    &lt;li&gt;Stir wet ingredients into dry ingredients just until moistened and blended. Do not over-mix. &lt;/li&gt;    &lt;li&gt;Combine topping ingredients. I used a small food processor to chop up the almonds. Sprinkle about 1 teaspoon for each pancake onto a lightly greased hot griddle. It works best if you spread the topping around in a circle so that it is the shape of a pancake. &lt;/li&gt;    &lt;li&gt;Pour 1/4 C. of batter over topping.&amp;#160; Immediately sprinkle another teaspoon full of topping. The ones I tried the next day were good, but not as soft and moist. Grease twelve standard muffin cups or line with muffin tin liners. &lt;/li&gt;    &lt;li&gt;In a medium mixing bowl, sift together the flour, baking powder, baking soda, and salt. Make a well in the center. &lt;/li&gt;    &lt;li&gt;In a small mixing bowl, stir together the egg, maple syrup, milk, and butter. Add all at once to the flour mixture and stir until just moistened (the batter should be lumpy). Fold in fruit. &lt;/li&gt;    &lt;li&gt;Spoon batter into prepared muffin cups, filling them 2/3 full. Bake until golden brown, about 15 minutes. &lt;/li&gt;    &lt;li&gt;For the icing, in a small mixing bowl stir together the powdered sugar, maple flavoring, and enough milk to make a smooth icing of drizzling consistency. (Or, cook on a&amp;nbsp;crepe maker&amp;nbsp;according to manufacturer's directions.) &amp;nbsp;Invert over paper&amp;nbsp;towels; remove crepe. &amp;nbsp;Repeat with remaining batter, greasing skillet occasionally. &amp;nbsp;Makes 36 crepes.&lt;br /&gt;&lt;br /&gt;OR you can use my method (the one above is from my &lt;i&gt;Better Homes &amp;amp; Gardens Cookbook&lt;/i&gt;):&lt;br /&gt;Mix everything together with a wire whisk, use oil spray on skillet in between each batch. &amp;nbsp;Using 1/2 cup size measuring cup, pour batter on skillet--we use a large skillet and do two at a time. Butter, melted &lt;/li&gt;    &lt;li&gt;1 C. chopped, peeled apple ( 1 large apple) &lt;/li&gt; &lt;/ul&gt;  &lt;p&gt;&lt;strong&gt;&lt;u&gt;Directions:&lt;/u&gt;&lt;/strong&gt;&lt;/p&gt;  &lt;p&gt;Combine all the above ingredients in a bowl and whisk. Pour into waffle iron. I have tried to whisk it or even use the electric mixer, but it seems to get the most smooth with a blender. Then grease your muffin tins or baking pan. I ran across the story of pancake week on Allrecipes.com:&lt;br /&gt;&lt;br /&gt;&lt;h2&gt;Feast Today, Fast Tomorrow&lt;/h2&gt;Pancake Week is grounded in ancient tradition. During the Middle Ages, it was common practice to prepare for the austerity of Lent by purging the pantry of luxurious foods such as eggs, butter and milk. Instant Pancake Mix (Bisquick)&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size: small;"&gt;1 C. Regular or quick-cooking oats&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size: small;"&gt;1 Egg&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size: small;"&gt;1/4 C. Sour Cream&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size: small;"&gt;1 1/2 C. Milk&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size: small;"&gt;1 Banana, sliced very thin&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size: small;"&gt;1/4 C. Walnuts, chopped&lt;/span&gt;&lt;/li&gt;&lt;/ul&gt;&lt;span style="font-size: small;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: trebuchet ms; font-size: small; font-weight: bold;"&gt;&lt;br /&gt;&lt;u&gt;Directions:&lt;/u&gt;&lt;/span&gt;&lt;u&gt;&lt;span style="font-family: trebuchet ms; font-size: small;"&gt;&lt;/span&gt;&lt;/u&gt;&lt;br /&gt;&lt;span style="font-size: small;"&gt;Combine first five ingredients with a wire whisk or hand beater (I used my Bosch compact mixer) until smooth. If needed, you can add up to 1/4 cup of milk to make it a bit more runny. Pour scant 1/4 c. measuring cupfuls onto a hot griddle. Arrange the banana slices on top of the uncooked side immediately after pouring it. The thinner the better. Sprinkle the nuts on top of that. I hate walnuts, so I always skip that step. Drizzle batter over top of the bananas just to cover them. Don't pour too much, just coat the exposed bananas and nuts. Cook until the edges are dry. Turn; cook until golden brown. This makes about 12 pancakes.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: small;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: small; font-style: italic;"&gt;&lt;span style="font-weight: bold;"&gt;Topping Suggestion&lt;/span&gt;: Serve with bananas, walnuts, and caramel. I also like peanut butter as a topping.
